I saw that lots of software exist in order to create an Adventure Game (point & click) like : Visionnaire Studio or AGE.
I've made a point & click game in AS3 (I've created a small Game Engine based on the ALPACA Engine (http://www.alpacaengine.com/) ).
I want to create a second game.
Do you think it is better (but harder) to use AS3 language by myself or the free Engines Game are very well designed and powerful enough to do what I want without all the effort of using AS3 ?

It depends on whether programming is more important to you, or actual game making. It's a lot of extra work to write your own engine and will take quite a bit longer, but you will learn more and be a better programmer.

i would go with Unity, this because it has a really big open and friendly community.
so in any case you get stuck, you'll be able to get a hand easily.
